Toasted Muesli

I love this recipe as it can easily be tailored to your taste buds.  As long as you have 6-8 cups of dry ingredients to the 1 cup of liquid, you can substitute as much as you like. Sultanas, prunes, sunflower seeds, walnuts, peanuts...what ever you can find in your pantry!

1/3 cup honey

1/3 cup natural peanut butter

1/3 cup coconut oil

4 cups rolled oats

1/2 cup pumpkin seeds

1/2 cup currants or raisins

3/4 cup coconut flakes

1 1/4 cup nuts roughly chopped (we use half almond half cashews, but walnuts are great too)

In a small saucepan on medium heat add the honey, peanut butter and coconut oil.  Stir until melted and combined.

Place all the dry ingredients into a large bowl then add the honey/peanut butter/coconut oil mix. Mix to combine.  

Transfer onto a large baking tray lined with baking paper and cook at 180 degrees for 20 mins.  Toss the mix 3 times over the 20 mins.

Remove from oven and toss again, then allow to cool.
